Flammulina velutipes (Enoki) likes winter. All my photos were taken in winter time. But, we can get cultivated one anytime like Lentinus edodes (Shiitake). They are very popular for us the Japanese. We use them as the material of salad, steam boat, suki-yaki, and other ordinary dish. The cultivated Enoki is so pale and quite different from the wild material. Taste is beautiful anyway. It is interesting that the cancer incidence among the Enoki farmers is low. They say some antitumor substance like Enoki's polysaccharides is effective. FWIW.
P.S. I found young material with
growing up on 9th Jan., 2000.
