Morchella esculenta

I know they are one of the most popular mushrooming catches in foreign countries. Most of the Japanese, however, ignore them. This is partly because their shape is not like the other mushrooms and partly because they are too light in taste and fragrance that the Japanese expect for the material of Japanese dishes. On the other hand, they are now getting their fans among the Japanese who love western-style meal. I think it is just the similar things to the Sushi. Foreign people perhaps felt awful about taking raw fish before. Once Sushi bar becomes popular, people noticed it not bad.
