MIDI controller is a kind of sensoring system.
For example, its keyboard is a sensor to catch finger actions, its breath controller is a sensor to catch breath flow.
There's a MIDI controller with curious sensors. YAMAHA has MIBURI whose sensor catches whole body movement so that available to play music to dancing. IBVA plays music to human brain waves. I-CUBE can be connected touch-sensor and optical-sensor.
